Dubai, UAE – Originally founded in Singapore by the Culinary Arts Group, Revolver Dubai brings its unapologetically bold flavours and flavour-forward creations to the UAE. Located in The Opus by the late Dame Zaha Hadid in Business Bay, the restaurant is set to host a one-night-only collaboration on Thursday, 15th May, as award-winning Chef Partner Jitin Joshi joins forces with celebrated Emirati chef Ali Yazdi for a daring nine-course set menu. As just the first of many incredible one-night-only pop-ups planned, this engaging destination will be further hosting several high-profile chefs and personalities for guests to enjoy in the coming months.
Revolver Dubai offers a high-energy dining experience where fire, spice, and heat take centre stage. With sleek interiors, a blazing wood-fired open kitchen and a lush terrace, guests are invited to witness this culinary spectacle unfold – indoors or al fresco.
At the helm, Chef Jitin Joshi brings 27 years of global experience, blending French technique with spice-driven flair. His career includes stints at Michelin-starred Benares, London’s acclaimed Gymkhana, and Dubai’s iconic At.mosphere and Amal at Armani Hotel, where his guest list has included David Beckham, Mick Jagger, Bill Clinton and King Charles.
Collaborating with Chef Jitin for the first time is celebrated Emirati Chef Ali Yazdi, the creative mind behind the multi-award-winning SLAW Burger Dubai. Drawing inspiration from local ingredients and traditional flavours, he brings an experimental edge and distinctive Emirati character to this special collaboration.
Together, the two chefs have crafted a high-impact menu that explores the interplay between fire and spice. The nine-course experience begins with a delicate King Crab Tartlet layered with green papaya and dressed in a Somtum-style yuzu sweet sauce for a taste of Southeast Asian cuisine, followed by Revolver’s signature Truffle and Morel Kulchette, a rich, flaky kulchette filled with parmesan and crowned with fresh truffles, and Chef Ali’s playful take on a local classic – Wing Majboos crisped and stuffed with Emirati machboos, yuzu gel, black lemon powder and onion curls. The fourth course delivers a savoury Duck Cigar, featuring 12-hour confit wrapped in golden filo.

Next, a grilled Cilantro Seabass, marinated in coconut and cilantro, is followed by the indulgent Wagyu Canoe Marrow Slider, elevating street food with finesse. To cleanse the palate, a refreshing Burnt Citrus creation with saffron and tangy yuzu yoghurt precedes Chef Ali’s signature Lamb Shank Claypot Rice – an eight-hour braised lamb, caramelised onions and Japanese rice. The finale: a decadent Matcha Cheesecake topped with silky Bueno sauce.
This pop-up marks the first in an ongoing series of one-night-only experiences that are all about flipping the script on the traditional dinner format.
